Vegan Curry


Curry is a popular dish around the world. It's a versatile and flavorful meal that can be made with a variety of ingredients.   • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon curry powder
  • 1 tablespoon garam masala
  • 1 can of chickpeas, drained and rinsed
  • 1 can of coconut milk
  • 1 cup of vegetable broth
  • 1 teaspoon salt
  • 2 cups of chopped vegetables (such as bell pepper, sweet potato, and zucchini)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges (for serving)


  1. Heat the coconut oil in a large pot over medium-high heat. Add the onion and cook for 2-3 minutes, until softened.
  2. Add the garlic, ginger, curry powder, and garam masala. Stir to combine and cook for an additional 1-2 minutes, until fragrant.
  3. Add the chickpeas, coconut milk, vegetable broth, and salt. Stir to combine and bring to a simmer.
  4. Add the chopped vegetables and stir to combine. Cover and simmer for 15-20 minutes, until the vegetables are tender.
  5. Stir in the chopped cilantro. Serve hot with lime wedges on the side.
