All round star baker and expert pastry chef Silvi is the brains behind London Apron. Silvi launched Silvina’s Nature Crowns back in 2017, whipping up deliciously light, reduced sugar meringues the traditional ‘egg-white’ way. In just 2 years, her meringue crowns made their way into some of London's ﬁnest boutique food shops. The popularity of her product was clear, as was the desire for a vegan alternative… This is how London Apron was born.
Vanilla Vegan Meringues

You’d be forgiven for not realising London Apron’s Plant Based Vanilla Meringues are made with 100% natural, vegan ingredients. Unreﬁned sugar and aquafaba create the light and airy meringue consistency, while vanilla extract adds a luxuriously indulgent ﬂavour. (Honestly, it’s pretty much magic.)
Make a delightful ‘Vegan Eton Mess’ by serving with fresh strawberries and coconut cream. To make coconut cream, refrigerate a can of coconut milk overnight then scoop out the cream. Beat with three tablespoons of sugar until soft peaks form.
Ingredients: Aquafaba (chickpea water), unreﬁned sugar, vanilla extract.
